WHere is a home-style version of a beverage featured on a new cocktail list. Designed as a large-volume pre-mixed that is packed with the tastes of the Christmas time, which makes it ideal for a celebration. Any leftover cordial you can use for morning drinks, desserts, or to mix another batch of this cocktail.
The Bikini Cocktail
Yields 10 people
For the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Premix (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Put all the components into a pan, heat until it reaches a gentle boil, agitating to dissolve. After that, remove from the stove and leave to cool down fully. Pour to a sealable bottle, seal and refrigerate it chilled, it can be stored for around four weeks.
For the Premix: Mix the specified spirits and syrup into a big jug, leave to sit for 60 minutes, then filter it preferably using cheesecloth, making it perfectly clear.
To serve: Add 85ml from the premix to a cocktail shaker containing ice, and agitate gently for a minute to chill. Strain into a chilled martini glass or equivalent, garnish with some cranberries adding the final touch by giving it a light spray of mandarin oil above the glass.
